I found another tool someone had written that could handle the fans directly, but it was for a system where he installed Proxmox on his mac and fed temperature sensor information from the video card through a Windows virtual machine back to the host to control the fan speed - wut?

IRK?! I just stuck an nVidia 3080-Ti in that system. It barely fit, but I just use it natively.
