Gee-you-eye, because (like everyone else have already pointed out) "gooey" sounds dumb and gross. It's an abbreviation, not an acronym.
Do people who say "gooey" say "you-ee" instead of UI too?

33% less syllables. Nice fluent mouth flow. The amount of mouth movement needed for ee-oo-eye part as opposed to oo-ee heavily outweighs the nastiness of the alias.

If someone calling a GUI a gooey actually catches your attention in the first place, ánd is even able to proceed in making you disgusted/disturbed youre just choosing to be bothered by it.
